The cuisine of California reflects the diverse culture of California. It is shaped by many traditions. It draws from Indigenous, European American, Hispanic American (Mexican, Latin American, Spanish), East Asian and Oceanian influences (Japanese, Chinese, Korean, Filipino, Vietnamese), as well as Middle Eastern and Mediterranean influences. It also connects to the wider American cuisine.

California’s food is also influenced by its Mediterranean climate, its geography, and its position near the ocean. The state has a rich history tied to Hollywood, technology in Silicon Valley, and the famous Napa wine country. All of these help create a unique mix of flavors. In the past, California used to be part of Mexico, and this history also plays a role in shaping its food today.

History

Local ingredients

California’s food uses lots of fresh fruits, vegetables, and meats, often grown without chemicals. The state has warm, mild weather that is great for growing many foods.

In Northern California, where famous wine areas are found, you’ll see foods inspired by French, Italian, and Mediterranean traditions, as well as Asian flavors. Many restaurants use ingredients from nearby farms and markets. A special kind of sourdough bread began in San Francisco.

The coast of California, especially the northern and central parts, gives people a lot of seafood to enjoy.

California grows almost all of the country’s almonds, apricots, dates, figs, kiwi fruit, nectarines, olives, pistachios, prunes, and walnuts. It is also the top producer of avocados, grapes, lemons, melons, peaches, plums, and strawberries. The Central Valley, though it is a small part of farmland in the United States, makes 8% of the country’s valuable farm products. The magazine Sunset has shared recipes that helped shape California’s food culture, encouraging people to enjoy meals outdoors.

Shellfish and seafood

In Northern California and the Central Coastal region, you can find lots of Dungeness crab. Sardines, oysters, and salmon used to be very important for the state, but there are fewer fish now. The Chinook salmon lives in California and lays eggs in rivers, but it is an endangered species in 2023.

Asian and Oceanian influences

California is close to Asia and Oceania, and many people there come from these places. Because of this, California uses foods from these styles.

The American way of making sushi may have started in California. The term "California roll" describes sushi with avocado as a main ingredient.

East Asian sweets like mochi ice cream and boba are popular all over California and the United States. Many places that make them began in California.

Latino and Hispanic influence

California has strong ties to its history as part of Mexico, which has shaped its food. Many popular foods come from Mexico, such as burritos, tacos, nachos, and quesadillas. You can find these dishes in many places in the state.

Besides these common dishes, many traditional Mexican meals are still enjoyed, especially in areas with large Mexican-American communities. These include tamales, tortillas, and enchiladas. California also offers foods from other parts of Central America, like pupusas from El Salvador.

A newer style called "Fresh-Mex" or "Baja-style" focuses on fresh ingredients and seafood, inspired by the food of Baja California. Popular restaurants like El Pollo Loco, Rubio's Fresh Mexican Grill, and Chipotle are part of this trend.

Fusion cuisine

Fusion cuisine is very popular in California. California’s cooking uses fresh, local ingredients, often bought daily at farmers markets. Menus change with the seasons, and some restaurants make a new menu every day.

California chef Wolfgang Puck helped make fusion cuisine famous. He created dishes like Chinese chicken salad at his restaurant Ma Maison in Los Angeles. His restaurant Chinois in Santa Monica was named after an idea from Richard Wing. In the 1960s, Richard Wing mixed French and Chinese cooking at the old Imperial Dynasty restaurant in Hanford, California.

Barbecue

Barbecue has been part of California’s food traditions since the 1840s. People have cooked beef in special pits on ranches. Santa Maria, California, is famous for the tri-tip, a special beef cut that can be grilled, baked, or roasted.

California’s barbecue style has been shaped by people who moved from Arizona, New Mexico, Texas, and Oklahoma. Popular barbecue foods include chicken, beef ribs, sausages, and steaks. They are often grilled or smoked in a barbecue pit. The barbecue sauce used here is usually tomato-based. But in Santa Maria, people let the flavor of the tri-tip and the slow fire show, without sauce. Pork baby back ribs are also a favorite in the Western part of the state for barbecue.

Sandwiches, burgers, and fast food

Southern California's car culture has made drive-in and drive-through restaurants very popular. Many famous fast food places like McDonald's, Jack in the Box, In-N-Out Burger, Carl's Jr., Wienerschnitzel, Del Taco, Taco Bell, Panda Express, Original Tommy's, Fatburger, The Habit, and Big Boy all began in Southern California.

Different areas have their own special fast-food menus. In Southern California, smaller restaurants like The Hat offer hamburgers, Mexican dishes, chili fries, and pastrami. In Northern California, places like Gott's Roadside serve special hamburgers with toppings like avocado and ahi burgers, plus salads and local wines. Original Joe's is a steakhouse that serves Italian-American food, including their famous dish Joe's Special. Gourmet hamburgers are very popular everywhere in California.

California-style pizza uses fresh toppings like vegetables and barbecued meats. It became famous first at Wolfgang Puck's Spago restaurants and later at places like California Pizza Kitchen.

Cioppino

Cioppino is a seafood stew from San Francisco. It mixes crab, shrimp, clams, and fish with herbs, olive oil, wine, onions, garlic, tomatoes, and sometimes other vegetables. It was created by immigrants from Genoa in the late 1800s. It is a type of Buridda and may be related to the Bourride and Bouillabaisse.

Crab Louie is a salad with lots of crab meat. It started on the West Coast of the United States in the early 1900s and was being served in San Francisco by 1910. It became popular in the 1930s at Fisherman's Wharf.

Fortune cookie

A fortune cookie is a sweet, crispy cookie wafer made from flour, sugar, vanilla, and sesame seed oil. Inside each cookie is a small piece of paper with a message, called a "fortune". Different groups in California say they helped make these cookies popular in the early 1900s, and they likely came from ideas by Japanese immigrants.

A French dip sandwich is a hot sandwich with thin slices of roast beef on a "French roll" or baguette. It is sometimes topped with Swiss cheese and onions and comes with a container of beef broth for dipping. Two restaurants in Los Angeles, Cole's Pacific Electric Buffet and Philippe the Original, both say they invented this sandwich in 1908.

Hangtown fry

Hangtown fry is a special dish made of scrambled eggs, bacon, and oysters. It started during the Gold Rush-era in Placerville and San Francisco and was seen as a fancy treat.

Mission burrito

A Mission burrito is a big type of burrito that became popular in the 1960s in the Mission District of San Francisco, California. It includes rice and is often cooked on a flat grill.

Gourmet food products

California is famous for its special food products. Many well-known bakeries started here, like Acme Bread Company and La Tempesta Bakery.

The state is also home to excellent cheese makers, such as Cowgirl Creamery and Marin French Cheese Company.

Chocolate lovers enjoy brands that began in California, including Ghirardelli Chocolate Company and See's Candies. Coffee fans can find famous names like Blue Bottle Coffee and Peet's Coffee & Tea that started in the state.
