Freeze Drying
Freeze drying, also called lyophilization or cryodesiccation, is a special way to remove water from food and other things without using heat. First, the product is frozen. Then, the pressure is lowered, which makes the ice turn directly into vapor. This process is called sublimation. This is different from most other drying methods that use heat to evaporate the water.
Because freeze drying happens at low temperatures, it helps keep many of the original qualities of the product. For example, when strawberries are freeze dried, they keep their shape. In medicines, freeze drying helps keep the important properties of liquids by adding inactive ingredients called excipients.
Freeze drying is used in many important ways, such as preserving tiny living things like bacteria, helping with medical treatments, making special kinds of coffee, and keeping foods and other products fresh for a long time.
History
The Inca people made a special food called chuño by freezing potatoes and then drying them in the sun in the 1300s. They also dried meat in a cold place called the Altiplano.
In Japan, a food called koya-dofu, which is freeze-dried tofu, was made in the 1500s in Nagano and later in the 1600s on Mount Koya.
Modern freeze drying started around 1890 when Richard Altmann found a way to freeze dry plant and animal tissues. During World War II, freeze drying helped keep blood plasma and penicillin safe without needing refrigeration. By the 1950s and 1960s, people began using freeze drying for medicine and food.
In 2020, freeze-dried candy became popular on social media. Stores sold freeze-dried versions of Skittles, Nerd Gummy Clusters, and SweeTarts.
Early uses in food
Freeze-dried foods were important for astronauts and military meals. Early space meals were hard to prepare, but later they became hot meals by adding water. NASA made these meals safer and better tasting.
Military rations also improved, offering better meals. Freeze-dried coffee was added to make meals tastier and easier to eat.
Stages
Freeze drying has four main steps: pretreatment, freezing, primary drying, and secondary drying.
In pretreatment, the product may be changed to make it easier to freeze. This can include mixing in special ingredients or changing the shape. For example, food pieces are often treated so they flow freely before freeze drying.
In freezing, the product is cooled below a special temperature so ice turns into vapor instead of melting. This step is important because it affects how fast the product dries and how well it keeps its quality.
In primary drying, the pressure is lowered and heat is added so the ice turns into vapor. This removes most of the water. In secondary drying, any remaining water is removed by raising the temperature a little and lowering the pressure more. When the process is done, the product has very little water left.

Equipment and types of freeze dryers
Freeze dryers have many types, but they all share some important parts. These parts are a vacuum chamber, shelves to hold the product, a condenser to catch water, a temperature control system, a refrigeration system to freeze the product, a vacuum system to remove air, and a control system to manage the process.
The chamber is made of polished stainless steel and has shelves for the product. It has a tight-sealing door to keep the vacuum inside. The condenser catches water during drying and must stay colder than the product. The refrigeration system uses special equipment to freeze the product. The vacuum system removes air to help dry the product, and the control system sets the right temperature, pressure, and time for each product.
