Freeze drying, also called lyophilization or cryodesiccation, is a special way to remove water from food and other things without using heat. Instead, the product is frozen and the pressure is lowered, which makes the ice turn directly into vapor through a process called sublimation. This is different from most other drying methods that use heat to evaporate the water.

Because freeze drying happens at low temperatures, it helps keep many of the original qualities of the product. For example, when strawberries are freeze dried, they keep their shape. In medicines, freeze drying helps keep the important properties of liquids by adding inactive ingredients called excipients.

Freeze drying is used in many important ways, such as preserving tiny living things like bacteria, helping with medical treatments like surgical transplants, making special kinds of coffee, and generally keeping foods and other products fresh for a long time.

History

The Inca people were making a special kind of food called chuño by freezing potatoes and then drying them in the sun as far back as the 1300s. They also used cold mountain air to dry meat in a place called the Altiplano.

In Japan, a food called koya-dofu, which is freeze-dried tofu, was made in the 1500s in Nagano and later in the 1600s on Mount Koya.

Modern freeze drying started around 1890 when Richard Altmann found a way to freeze dry plant and animal tissues. During World War II, freeze drying became very important for keeping blood plasma and penicillin safe without needing refrigeration. By the 1950s and 1960s, people began using freeze drying for both medicine and food.

In 2020, freeze-dried candy became very popular on social media, with stores selling freeze-dried versions of Skittles, Nerd Gummy Clusters, and SweeTarts.

Early uses in food

Freeze-dried foods were very important for astronauts and military meals. Early space meals were hard to prepare, but later they became hot meals by adding water. NASA made these meals safer and better tasting by adding special oils, coatings, and careful checks to keep them clean.

Military rations also improved over time, offering better meals in the field. Freeze-dried coffee was added to easy-to-eat meals, making them tastier and more convenient.

Stages

Freeze drying has four main steps: pretreatment, freezing, primary drying, and secondary drying.

During pretreatment, the product might be changed to make it easier to freeze. This can include mixing in special ingredients or changing the shape of the product. For example, food pieces are often treated to make them flow freely before freeze drying.

In the freezing step, the product is cooled below a special temperature to make sure ice turns directly into vapor instead of melting. This step is very important because it affects how fast the product dries and how well it keeps its quality.

During primary drying, the pressure is lowered, and heat is added so the ice turns into vapor. This removes about 95% of the water. Finally, in secondary drying, any remaining water is removed by raising the temperature a little and lowering the pressure even more. When the process is done, the product has very little water left in it.

Disadvantages

Freeze drying can sometimes leave harmful germs in the food because the low temperature doesn’t always kill them. Even though the dry conditions stop these germs from growing right away, they can still stay alive. If the food isn’t stored properly, it might absorb moisture and let the germs start growing again.

Freeze drying is also much more expensive than regular drying methods—about five times more costly. This makes it best for special products that become more valuable after being processed. Another issue is that the oil used to heat or cool the shelves in the freeze-dryer can sometimes leak and mix with the food, making it unsafe. Special tools are used to detect these leaks quickly and prevent contamination.

Freeze dryers come in many types, but they all have some key parts. These parts include a vacuum chamber, shelves to hold the product, a condenser to trap water, a system to control temperature, a refrigeration system to freeze the product, a vacuum system to remove air, and a control system to manage the process.

The chamber is made of polished stainless steel and has shelves to hold the product. It has a tight-sealing door to keep the vacuum inside. The condenser traps water during drying and needs to stay colder than the product. The refrigeration system uses special equipment to freeze the product. The vacuum system removes air to help dry the product, and the control system sets the right temperature, pressure, and time for each product.
