Vanilla

Vanilla is a special spice made from the seed pods of certain orchids, mainly from a plant called V. planifolia. These plants need help to grow their pods, called pollination. A young person named Edmond Albius, who lived on the island of Réunion, discovered an easy way to do this by hand in 1841, which let people grow vanilla all over the world.
Today, three main types of vanilla are grown, but most comes from V. planifolia, also known as Bourbon or Madagascar vanilla. This type is mostly grown in Madagascar and nearby islands, as well as in Indonesia. Together, these places make about two-thirds of all the vanilla used around the world.
Even though vanilla is one of the most expensive spices—only saffron costs more—it is very popular. People use it in baking, making perfumes, and for pleasant smells because just a little bit gives a lovely flavor and scent.
History
Vanilla grows naturally in places like the Gulf of Mexico, from Tampico to parts of South America, and in the Caribbean. The Totonac people in Veracruz, Mexico, were among the first to grow vanilla on farms around the year 1185. They used it to add flavor to food and drinks, and also as a fragrance and good-luck charm.
Later, the Aztecs from Mexico also enjoyed vanilla. They mixed it with cacao to make a special drink called "xocolatl," which was like early hot chocolate. When Hernán Cortés visited Europe in the 1520s, he brought vanilla and chocolate with him. At first, Europeans mainly used vanilla to add flavor to chocolate. But by the 1700s, the French began using it to flavor ice cream too.
For a long time, Mexico was the main place where vanilla was grown. But in the 1800s, people learned how to pollinate vanilla flowers by hand, which made it possible to grow vanilla in other tropical places like Réunion, Madagascar, and the Comoros Islands. Today, Madagascar and Indonesia are the biggest producers of vanilla.
Etymology
The word vanilla comes from the Spanish word vainilla, which means "little pod". This word is a smaller form of vaina, which comes from the Latin word vagina meaning "sheath". This describes the shape of vanilla pods. The word "vanilla" was first used in English in 1754, when a botanist named Philip Miller wrote about it in his book Gardener's Dictionary.

The main type of vanilla grown comes from a plant called V. planifolia. It originally grew in parts of Mesoamerica and South America but is now farmed in many tropical areas. Indonesia and Madagascar are the biggest producers today. Other types include V. pompona and V. tahitiensis, which are grown in places like Niue and Tahiti, but they have less of the flavor ingredient found in V. planifolia.
Vanilla plants grow like vines, climbing up trees, poles, or other supports. They need the right environment, which includes the nearby plants, climate, and soil. Growers carefully manage the plants so they stay at reachable heights and encourage them to bloom.
The tasty compounds in vanilla come from the fruit, which comes after the flower is pollinated. These fruits, called seed pods, are small but long, about one-third of an inch wide and six inches long. Inside each pod is oily liquid with many tiny seeds. Each flower makes one fruit. The flowers have both male and female parts, but they are designed in a way that makes it hard for them to pollinate themselves.
The only known natural pollinators for vanilla are certain bees and honey bees. However, most vanilla farms use hand pollination to make sure the flowers produce fruit. This method was first tried in Europe in 1837 and later improved by a young boy named Edmond Albius in 1841. He used a small piece of bamboo to help move the flower's parts, allowing it to pollinate itself and produce vanilla pods.
Cultivars
There are different kinds of vanilla, each with its own name based on where it is grown:
- Bourbon vanilla comes from V. planifolia grown on islands in the Indian Ocean like Madagascar, the Comoros, Mauritius, and Réunion. It is also used for vanilla grown in tropical countries such as India.
- Mexican vanilla comes from the native V. planifolia in Mexico.
- Tahitian vanilla is made from V. tahitiensis in French Polynesia. This type was brought there by a French admiral and makes up less than one percent of the world’s vanilla.
- West Indian vanilla is made from V. pompona grown in the Caribbean and parts of Central and South America.
The term French vanilla often describes special preparations with a strong vanilla flavor, sometimes including eggs. It originally comes from a French way of making vanilla ice cream with a custard base.
Chemistry

Real vanilla flavor comes from the seed pods and contains many different compounds, including vanillin, which gives vanilla its special taste and smell. Synthetic vanilla flavor is made by creating vanillin in a lab using ethanol. Vanillin was first taken from vanilla pods in 1858 and can also be made from materials like pine tree sap. Most food-grade vanillin used today is made from a chemical called guaiacol.
Cultivation
Vanilla grows best in hot, humid places, usually near the equator. It needs special care to grow well, including the right kind of soil and support structures like trees. The plants need shade and regular care to produce vanilla pods.
Growing vanilla usually starts with small pieces of the plant, called cuttings, or through a laboratory method called tissue culture. It takes a few years for the plants to grow big enough to produce flowers and vanilla pods. Each flower must be carefully pollinated by hand to make sure it produces a pod. After the flowers are pollinated, the pods take several months to mature and become ready for harvest.

Production
In 2023, the world produced about 7,433 tonnes of raw vanilla. Most of it came from Madagascar, which made up 42% of the total, and Indonesia, which provided 25%.
Uses
Vanilla is a very popular flavor used in many foods, drinks, and cosmetics. It is often used in ice cream, chocolate, custard, caramel, coffee, cookies, and cakes. There are four main ways people use natural vanilla:
- Whole pod
- Powder (ground pods, sometimes mixed with sugar or other ingredients)
- Extract (in alcohol or sometimes glycerol solution)
- Vanilla sugar, a mix of sugar and vanilla extract
To add vanilla flavor to food, people can use vanilla extract or cook vanilla pods in the liquid they are preparing. Splitting the pods in half can make the flavor stronger because it exposes more of the pod's surface to the liquid. Natural vanilla can give a brown or yellow color to foods, depending on how much is used. While good-quality vanilla tastes great, many foods use less expensive artificial vanilla flavorings because real vanilla costs more.
Besides being enjoyed on its own, vanilla is also used to improve the taste of other flavors, such as chocolate, custard, caramel, and coffee. Even though it is expensive, vanilla is highly valued for its delicious flavor.
The food industry sometimes uses substances called methyl and ethyl vanillin as cheaper replacements for real vanilla. Tests have shown that, in some cases, people cannot tell the difference between artificial vanilla and real vanilla, although natural vanilla is often preferred for certain foods like cakes and unheated or lightly heated dishes.
People once thought that liquid from vanilla pods could help with stomach problems, but this is not commonly believed today.
Contact dermatitis
The juice from vanilla orchids can sometimes irritate skin. When vanilla plants are cut or their beans are picked, a sap comes out that may cause skin irritation if it touches bare skin. This sap contains tiny crystals made of calcium oxalate, which are believed to be the main reason for this skin irritation in people who work with vanilla plants.
